Recipe: Sweet Potato Wedges with Cider Reduction

I made these tasty little wedges last week to go along with Veganomicon's Chickpea Cutlets. They are pretty easy, very tasty and a fancy change of pace from a basic roasted sweet potato wedge. The recipe has you reduce the cider, set aside and then proceed to prepare the potatoes but both of those things take about 45 minutes so it seems like a better plan to save time and get the potatoes in the oven while the cider is reducing. Just a little hint for those of you like me that sometimes don't read the whole recipe before getting started.

Sweet Potato Wedges with Cider Reduction
From Vegetarian Times

2 cups apple cider or unfiltered apple juice
2 large sweet potatoes, each cut into 8 wedges
2 Tbs. olive oil
Ground cinnamon, for sprinkling

Boil cider in saucepan over medium heat 45 minutes to 1 hour, or until reduced to thick and syrupy 1/4 cup. Set aside. Preheat oven to 350°F. Brush sweet potato wedges with oil, sprinkle with cinnamon, and place on baking sheet. Bake 45 minutes, or until tender and beginning to brown. Transfer to platter, and drizzle with cider reduction.
